Been wanting to make Goreng Cencaru Sumbat since beginning of the fasting month but just did see the right size of the cencaru, either its too small of too big. Until one day last week, i found the cencaru size that i like he he...so happy i got a ringgit worth of shredded coconut, a bit of chili api, a few red onions, tumeric, tumeric leaves and of course salt to taste. After filling in the mixture of pounded coconut and the rest, deep fried the fishes( i bought 2) and i felt like a small kid eagerly waited the time to break fast.....This is Chef Wan's version of daging dendeng quite similar to my blogger friend, ms hart's Ayam Bali recipe.
Dessert was Banana Choc Chips Muffins, courtesy of Chef Wan's too!

Muffins again.....
I have been going to so many open houses, hosted by former colleagues, friends and relatives. I like to bring 'buah tangan' along just as a token of thanks for inviting us. Before i was bitten by the baking bug, i would bring fruits or store bought goodies, but now i would just whipped up something to go into the oven and brought them still warm most of time. These muffins thus far the easiest to make and very delicious to eat. Recipe is right here.

Traditional vs mat salleh food .....
Karipap@ curry puff is my boys' and the father favorite local kuih...come to think of it the father started to be-friended the mum because of karipap. I remember once i made these things out of a kg of flour and my husband finished them un-aided when we were in the States ha ha ha....maybe he missed that thingy so much..
So this is my version of this savory kuih...all ingredients are estimated...
I used these for filling :-
5 - 6 small potatoes - cut into small cubes
2 tbspoon beef curry powder - add abt 3 tbls water to make curry paste
1 medium size big onion - chopped
2 cloves garlic - thinly sliced
2 cm ginger - julienned
1/2 cup of water
1 sprig of curry leaf
salt to taste
a bit of oil
Method:-
Heat the oil and fry the onion, garlic, curry leaf and ginger for a few minutes, throw in the curry paste and simmer for awhile. Put in the water and chopped potatoes, salt to taste and let it simmer until the mixture almost dry. Cool the filling and prepare the skin.
I used abt 2 cups of flour, 3 tbls margerine, 1 tbls cooking oil, a bit of warm water mix with a little salt. I mixed the flour, margerine and the oil by using just the tips of my fingers. then i added the water a little at a time until i got an un-sticky dough. I divided the dough into small balls the size of slightly smaller than a ping pong ball, rolled it flat and filled it with about a teaspoon of the filling, closed the edges by pleating. Fry the puff in medium heat oil. My boys enjoyed the puff hot...
Whatever Jam Muffins - yummy ones which i adapted from here Jam Muffins.
Can use any jam you want, i have tried raspberry, strawberry and blueberries and all turned out very nice. I usually don't eat most thing that I bake but I eat these muffins. Very easy to bake.
You need,
140 gm butter at room temperature
120 gm castor sugar
2 eggs
Half teaspoon vanilla
8 tbls fresh milk
200 gm flour sifted with
2 tsp baking powder
Whatever jam you like to use.
Method:
1. Heat the oven at 180ºC.
2. Beat butter until soft then add in the sugar and beat again medium speed.
3. Add eggs one at a time, add the vanilla then the milk. Beat till well incorporated.
4. Add in the sifted flour with baking powder and beat slow.
5. Fill half of the muffins cup with the batter, put your favorite jam in about 1 tsp, and top with the batter again
6. Bake for about 25 minutes or do the skewer test.
I just love the texture and the taste of this muffins...

Poppy seed muffins with lemon glazed
A dear friend sorta invited me to her sister small birthday party. I do not know the sister well enough to give her a gift, do not know her like or dislike. But I do know she likes good food. So I decided to bake something to bring to the party and I felt like trying new recipe. I browsed the net and from my favorite site 'Joy of baking', I saw a picture of this gorgeous little muffins, my mind was made up. I checked my stock in the kitchen and good enough I did not have to go out as everything the recipe calls for is available in my kitchen. And this morning the hubby felt like bonding with the boys, he told me he would send them to school on the way to the office. Aaah.....nice i said to myself. I went back to bed for awhile and got up just after 8.00, washed my face and started to bake the muffins. Forty-five minutes later I took out the muffins from the oven and it turned out just beautiful.
The recipe is here:-http://www.joyofbaking.com/muffins/PoppySeedMuffins.html.

For kina at http://kina163.blogspot.com/

First muffin recipe i tried. This recipe is from Chef Wan's Sweet Treats. The muffins in the pictures were a bit smaller than the standard muffins as i baked these for my 2nd son birthday last March. I used to have the pictures of the standard muffins but i could not find them, maybe in my son's hard drive(the pc used to be mine b4 he took over). I have baked these muffins many times as it seemed kids love these, maybe its the chocolate chips...
The recipe:-
1/2 cup butter
1 cup brown sugar
1 egg
1 cup ripe bananas, mashed
1 tea spoon baking soda
2 tablespoon hot water
1 1/2 cups all purpose flour
1/2 teaspoon salt
1/4 cup chocolate chips
bananas, cut into chunks, and chocolate chips, to decorate.
Method:-
- Cream butter and sugar until fluffy. Add egg and bananas.
- Mix baking soda with hot water and pour into the butter mixture.
- Fold in the flour and salt. Stir in chocolate chips.
- Spoon the batter into greased muffin cup/lined with papers muffin cups. Top each muffin with 2 bananas chunks and sprinkle with chocolate chips (i did not put the chunks when i baked this muffins). Bake at 180C/360F for about 20 minutes.

Blueberry Muffins
I went up to KL 2 week ago and bought blueberry. Not easy to find this in N9, so i just bought for my kiddos. I put it in the fridge and completely forgotten the existence ha ha ha. Lucky i realised i had blueberry in the fridge after 2 week, if not it would be wasted if it gotten spoilt. so i ended up baking the muffins for tea last week.
Recipe adapted from Australian Women's Weekly cooksbooks titled " Muffins, Scones and Breads".
2 cups selfraising flour
3/4 cup packed softbrown sugar
1 egg lightly beaten
1/2 vegetable oil
3/4 cup buttermilk (alternate - a slightly less than 3/4 cup milk plus 1 tbls butter)
1 cup fresh blueberries
Stir dry ingredients and mix the rest in large bowl. Dont overwork the mixture. Make 12 std muffins
