Peanut butter cupcakes with buttercream rosettes...and nostalgia fried rice.


These cupcakes were for Siti Sarah, my husband's niece. Shes going to pursue her degree in University Malaysia Terengganu. I did not know where the university is so i asked Uncle Google. Apparently it is inTelipot....She was happy receiving the cupcakes but i could sense she was nervous as well about going to start the next journey of her life. I pray that she will do well....Sarah, if you really give your best, Mak Lang knows you can do it...I used recipe from Wilton book for these cupcakes.

Why i called this fried rice nostalgia, because i saw my friend's maid fried the rice this style when i was in Form 4. I loved it so much i got her maid to show me how she fried the rice.

no recipe for this actually as we can basically put it whatever we fancy in this nasi goreng...just eyeball the ingredients ...

basically i use,

red chillies+ bird eyes chillies, garlic, shallots and a bit of belacan - pounded

long beans cut into small bits
anchovies(ikan bilis) deep fried
leftover fried fish...pinch out the flesh to small bits
eggs- fried scrambled
carrot and peas(optional)

heat up the oil, fry the pounded thingy until fragrance( i like my chillies a bit garing), throw in the fish, tomato ketchup and soy sauce, let it fry a bit...throw in the cooked rice, stir, and throw the rest in this order, the eggs, carrot and peas, the long bean and lastly the ikan bilis...mix well after every ingredients mix in but dont fry the vege too long coz you will not get the crunchy bite....

salam, my nostalgia fried rice would be nasi semalam with sambal and ikan goreng and lots of kicap - the way my mother used to make it.

mak aiii, saya memang suka nasi goreng terutama yang pedas-pedas. waktu mengandung, saya alah bau nasi apalagi makan. hanya satu nasi yang boleh makan - nasi goreng cili padi, pedas-pedas, tumis denga bawang merah dan putih serta bilis garing-garing... zai, kau buat aku terliur pulak dah
