Channel 11 of Astro is one of my favorite. I watch Jamie Oliver shows, Nigella, Anthony Bourdain, Surreal Gourmet, Surf the Menu and many others. At times the kids would hide the remote from me. Somehow i don't exactly remember what time and day these programs will be on. By chance while flipping channels only i watch them. Lucky me, there many repeat for these programs. One other series which i like to watch is Party Planner with David Tutera. Always amaze with his creativities and the passion he has. Most of the time he would meet the caterer of the party food and show the audience how to make some of the food serve in the party that he help plan. In one show the theme requested by his client was Southern theme and the chef showed how to make typical southern fried chicken. It was so simple i manage to jot down what he used to fry the chicken. I gave this fried chicken a try last week and you can see the reception by looking at the hand in the picture lol.....just eyeball the ingredients and you cannot go wrong here...
David Tutera's Southern Fried Chicken
Your favorite chicken parts
a little bit of cayenne pepper
salt and black pepper to taste
some flour
Clean the chicken and dry with paper towel, rub the chicken with cayenne pepper, salt and black pepper, dredge the chicken with flour and fry in a very hot oil....10 mins on each side and the chickens are done.

Chocolate Crumble Cheesecake
This is the cheesecake which made me hook to baking. I learned to make this cake from owner of the bakery shop near my sister's home which she frequented often. So i sat for almost 2 hours watching the lady demonstrated on how to make this cake and a few other recipes. I was fidgeting as i was not used to just sit at the same place for long. But, after taking a bite of this cake i said to myself...wow! yummmyyyyy.....4 layers of goodness; the cake base, the cream cheese, the crumb and the crunchy almond flakes.....then i discovered many recipes from the internet, and my interest in baking soars......
Here is the recipe for the cake
Chocolate Crumble Cheesecake

125g castor sugar
190g butter
1 egg size A but B will do too

- Spread the batter evenly in the cake tin.
- Then, beat cream cheese, castor sugar and the egg together till incorporated.
- Pour over the batter and level off
- Pipe the melted chocolate over the cream cheese - see pic below or you can be creative here, i just used small plastic which i cut the tip to pipe the choc
- Spoon the jam as you wish

Dadih @ yogurt??
A few months ago, while having my usual morning chat with my mum in law, she asked me if i knew how to make dadih...i told her i did not. I saw these thing being sell at many roadside stalls and during ramadan but never really think about making it. She said kids love it and she wanted to learn how to do it. So i went to Pak Google and google the word 'dadih' and Pak Google said these thing originated from Indonesia, its yogurt make from buffalo milk...then of course i found the many version of the recipes. Basically, most recipes call for milk, sugar, agar2 and some flavoring and colors. With this knowledge i told my mum in law but she was adamant no agar-agar in the making of version of dadih. Since some people told her that no agar-agar is used. Just a mixture in a packet. Not wanting to argue with her i went home and tried one of the recipes. Then i gave her to try and she said the taste and texture was similar to the ones that she tasted before. But she still insisted that the friend told her that no agar-agar used to make this, only some powder mixture in a packet!!...
In my next trip to get my baking supply suddenly i saw so many packets hanging neatly against the shop wall with the words "Serbuk Dadih Buah-buahan" staring at my face. I took one of the packet and looked for the ingredients and true enough the words agar-agar were listed. Haa...the prove i can show to my dear mum in law i said to myself...i bought one and showed it to her and she just nodded. I think some people do not read the ingredients when they bought this kind of thing. However, one think i notice, kids really like to eat these especially if its kept in the fridge for awhile. I made earlier with the recipe i got from the net and the second time with the mixture from the packet, i think the first time version was better.Anyone with recipes of dadih beside the pre-mix powder like the picture, i hope you dont mine sharing it with me....

Dishes for last night dinner
These were the dishes we had for dinner last night. Ray fish in hot sour gravy (asam pedas), crispy fried tempe and my version of fried chicken. I do marketing every other day and when i went to the market yesterday morning it took me awhile pondering in the car about what should i serve for dinner. Remembering the other day my big boy asking me why i had not make the asam pedas for sometimes i decided to cook just that. Then when i was in the market the girl selling the vegetables told me that she has plenty of tempe and i got some. While at the fish stall i was so taken with the freshness of the ray fish, i didn't realise i took 2 big cut of the fish. It was almost 2 kg ha ha ha..... I was lucked out on the ginger bud (bunga kantan) so i went to a supermarket near my in laws' place. Then i dropped by at their house and had nice morning teh 'o' and chatted awhile with my mum in law. I gave her half of the fish. Lunch fare usually very simple at home since only 3 of us would be eating my 2 younger boys and myself. Usually we have fried rice or burgers or hotdog or bread but i would be frowning if the kids ask for maggie mee, but sometimes i would give in.
Just fried tempe, Ray fish in hot sour gravy( asam pedas) and my fried chicken.

Spaghetti ala zaitgha for tonite dinner
My second son just adore spaghetti bolognese in Pizza Hut and always hassle me to make at home so that he can have as much as he wants instead of just one order from that joint. I browsed the net for the recipes but i got very confused for there are so many versions of this sauce. However, basically most would have minced meat, tomato paste and tomato puree. As such, i decided to just throw in the ingredients at my whim and fancy ha ha ha....wonder how it turn out? Surprisingly it came out pretty good in spite of just using burger meat as the supermarket behind my house ran out of minced meat
Here are what i tossed into the big pot for this sauce.
5 pieces of burger meat (Ramlee brand)
4 beef sausages(Ramlee brand)
1 big tin tomato sauce and 3 tin of water
1 small tin tomato puree
3 tablespoon tomato ketchup
5 cloves of garlic - chopped
1 big yellow onion - chopped
2 celery stalks - sliced
1 carrot - grated
2 tablespoon dried oregano
2 tablespoon dried basil
1 tin button mushroom - sliced
3 tablespoon olive oil
salt and pepper to taste
Heat the olive oil and throw in onion and garlic, dump in the burger meat and pour in the tomato sauce, tomato puree and the water. Put in celery, carrot and mushroom. Let it simmer for half an hour or more. Throw in oregano and dried basil, put salt and pepper to taste. If the sauce get too thick just add in some water. Meanwhile boiled the spaghetti as per instruction on the package. Then of course served hot...enjoy...my kids did and they also wallop the sauce with toasted bread.

Devil's Cupcakes with Chocolate Buttercream frosting
My eldest sister called me on Monday telling me that her daughter was accepted to study in UITM Bkt Mertajam. I was very glad for my niece and know how lucky she was to be going there. I heard countless stories about students with much better results than my niece's do not get to further their studies to our public colleges. My sister also told me she would stop by my house on the way to Penang on Tuesday and asking me to have a 'talk' with my niece...ha ha ha now i wonder what am i supposed to say to 17 year old girl. I am known as Mak Teh to my nieces and nephews but i think there is always a silence "garang" after the 2 words...anyway, as garang as i am, i feel oblige to bake her favorite cupcakes as in the pictures so that she can enjoy them while traveling up north . Adapted from:- http://cupcakeblog.com/index.php
