First muffin recipe i tried. This recipe is from Chef Wan's Sweet Treats. The muffins in the pictures were a bit smaller than the standard muffins as i baked these for my 2nd son birthday last March. I used to have the pictures of the standard muffins but i could not find them, maybe in my son's hard drive(the pc used to be mine b4 he took over). I have baked these muffins many times as it seemed kids love these, maybe its the chocolate chips...

The recipe:-

1/2 cup butter
1 cup brown sugar
1 egg
1 cup ripe bananas, mashed
1 tea spoon baking soda
2 tablespoon hot water
1 1/2 cups all purpose flour
1/2 teaspoon salt
1/4 cup chocolate chips

bananas, cut into chunks, and chocolate chips, to decorate.

Method:-

  1. Cream butter and sugar until fluffy. Add egg and bananas.
  2. Mix baking soda with hot water and pour into the butter mixture.
  3. Fold in the flour and salt. Stir in chocolate chips.
  4. Spoon the batter into greased muffin cup/lined with papers muffin cups. Top each muffin with 2 bananas chunks and sprinkle with chocolate chips (i did not put the chunks when i baked this muffins). Bake at 180C/360F for about 20 minutes.
Note:- I only use pisang rastali for this recipe, but other bananas should be fine too.

wow.. banana choc chip muffins. I've got to try this one day. Sounds yummy. Thanks!

It is like eating Chunky Monkey ice cream. There is banana flavour with choc chips in it. :)

would you believe i first made muffins when i was 9 years old? it was a recipe in a children's book "things to do and things to make".
my dad was the guinea pig. first i followed the recipe and i baked the muffins in a muffin tray (i dont know whether people use it now). the ingredients were very basic and it was simple to make and bake.
then i would serve the muffins to my dad.
he'd always say "sedap nya".
so. every saturday afternoon i'd make them. and then i'd put flavours -- cocoa, syrup, god-knows-what else.
my father was so sporting, he ate them until i think one saturday, dia dah tak tahan... he said "ena cuba try recipe lain, ya?"
my mum told me, very nicely and gently, later in my life, that when i started putting flavours, the muffins dah rasa semacam but my dad tak sampai hati nak tegur. so dia makan.
poor man.. such torture. but i was only 9!

but, i will always love muffins. whatever flaovur.
